Retro – ‘Baked bean hash’
Ready to eat in 10 minutes – Serves 6
Ingredients
Dash of Gillett grove olive oil available from Boatshed or Dewsons Applecross
4 Golden Egg Farm WA eggs
6 Ruby Lou Western Potatoes mashed (skin on)
420gm tin baked beans
2 rashes bacon
2tsp parsley
Method
- Place mashed potato in a non stick Aida frying pan
- Mix together the rest of the ingredients (beat eggs first) then mix in Baked Beans, finely chopped Bacon and parsley.
- Pore into the fry pan on top of the potato
- Cook in pre-heated oven at 190deg until set
